Health Secrets of Coconuts Crystals

When the coconut tree is tapped, it produces a nutrient-rich “sap” that exudes from the coconut blossoms. This sap is very low glycemic (GI of only 35), contains a wide range minerals, 17 amino acids, vitamin C, broad-spectrum B vitamins, and has a nearly neutral pH.

 

Because this natural sap is already sweet right out the tree, the evaporation time for it to crystallize into brown sugar is very rapid. By contrast, the cane juice used to make commercial brown sugar must boil for many hours for it to become sweet tasting, and is not a true brown sugar because molasses is added back after it has been refines into white sugar.
