What’s in a name? Whether it’s called tee kwass, medusa tea or champignon miracle, kombucha is still the same probiotic-rich beverage it has been for hundreds of years. Praised for its bountiful benefits, kombucha tea can provide various strains of good bacteria, including Acetobacter, Saccharomyces and Lactobacillus.

Due to the nature of kombucha and the various ways in which it can be cultured, it’s virtually impossible to know the exact microbial composition. This can vary based on the type of water used, the brewing time, the culturing temperature and so forth. However, what is always true to kombucha is gluconic acid, acetic acid and fructose.

The bacteria and yeast strains in kombucha are what make it fizz and make it taste a tad tangy. These unique features are what makes it perfect as a refreshing beverage, as well as a substitute for vinegar in salad dressing and condiments. Its acidity is useful in meat marinades and even cocktail recipes. Perhaps most surprising is kombucha’s role in hair care. If your kombucha becomes too acidic to drink, simply mix it 1:1 with water and use as a conditioner – just be sure to rinse thoroughly!

Side note: All kombucha begins with SCOBY, a Symbiotic Culture of Bacteria and Yeast. The SCOBY looks like a leathery pancake or similar to the smooth, thick body of a mushroom. In this SCOBY, bacteria and yeast strains live together in a complex, mutually supportive community – hence “symbiotic.” The SCOBY is included in this starter kit, making your DIY experience that much easier.

How long will it take?

Total fermentation time: 30 days

Active, hands-on time: about 5 minutes to start, plus 1 minute every day

 

What will I need to get started?

  • 1 packet dehydrated kombucha SCOBY (in this box)
  • 2-3 cups filtered water, bottled spring water or any water free of chlorine and fluoride
  • ¼ cup white sugar
  • 2 black tea bags or 1-1/2 tsp. loose tea
  • ½ cup distilled white vinegar
  • Quart-size glass jar
  • Thermometer
  • Coffee filter or tight-weave cloth
  • Rubber band

How does this work?

 

Activate your dehydrated kombucha SCOBY:

  1. Add sugar to quart-size glass jar
  2. Heat water and pour over sugar to dissolve
  3. Add tea bags or loose tea to sugar water and let steep 10 minutes
  4. Remove tea and let it cool to room temperature (about 68 – 85 degrees F)
  5. Add vinegar and stir
  6. Add kombucha SCOBY starter culture
  7. Cover with a coffee filter, securing with a tight rubber band
  8. Store in a warm spot (68 – 85 degrees F), out of direct sunlight for 30 days
  9. Once per day, spray vinegar over top coffee filter to keep pests away and  prevent airborne mold

Note: please follow the enclosed instructions for making the first 3 batches of kombucha before using this to make a batch of kombucha tea.

What can I make with this?

  • Combine with sweetened tea for a refreshing, nutrient-rich beverage
  • Use as a substitute for vinegar in homemade dressings or condiments
  • Turn into a meat marinade for pork, chicken, beef, lamb, shrimp or fish
  • Freeze into ice pops and enjoy for dessert
  • Add to water for soaking grains – this makes them fluffier and tastier
  • Use instead of sweet-and-sour mixes in a cocktail recipe
  • Add to water and pour over shampooed hair for healthier strands

 Store in a cool, dry place/refrigerate for long-term storage.
